Lost Recipe: Shitaki Mushroom Soup

  • Saute 2 Tbs. oil
  • Slice tops of mushrooms (caps not stems)
  • Add to oil
  • Add scallions (sliced thin, white parts only)
  • Add minced garlic (1 clove)
  • Add 1 Tbs. ginger (chopped)
  • Salt to taste
  • Cook down over medium heat
  • Add liquid - 3 and 1/2 cups of low sodium chicken stock & 3 cups of water
  • Bring to a boil
  • Add soba noodles and cook for 5 minutes
  • Add bunch of fresh spinach and cook for 1 minute
  • Add 1 Tbs soy sauce
  • Add 2 Tbs. lime juice
