- Saute 2 Tbs. oil
- Slice tops of mushrooms (caps not stems)
- Add to oil
- Add scallions (sliced thin, white parts only)
- Add minced garlic (1 clove)
- Add 1 Tbs. ginger (chopped)
- Salt to taste
- Cook down over medium heat
- Add liquid - 3 and 1/2 cups of low sodium chicken stock & 3 cups of water
- Bring to a boil
- Add soba noodles and cook for 5 minutes
- Add bunch of fresh spinach and cook for 1 minute
- Add 1 Tbs soy sauce
- Add 2 Tbs. lime juice
